Smoked Salmon Pasta

Ingredients

  • 8 oz. pasta
  • kosher salt
  • 1/4 cup pine nuts
  • 2 tbsp. olive oil
  • 1/3 cup chopped shallots
  • 2 cloves garlic, minced
  • 1/3 cup dry white wine
  • 1/4 cup cream (optional)
  • 1 tbsp. lemon juice
  • 2 tbsp. lemon zest, divided into in half
  • 2 tbsp. fresh dill, chopped
  • 4 oz. smoked salmon, cut into bite-sized pieces

Instructions

  • Boil pasta according to package instructions. Reserve 1 cup of water before draining pasta.
  • Toast pine nuts in a single layer in a skillet on medium heat until lightly browned.
  • While pasta is cooking, prepare the sauce. In a large skillet heat olive oil on medium heat. Add the shallots and garlic. Cook for 2 minutes, then add white wine, lemon juice, and 1 tbsp. zest. Increase heat and let reduce by half. If you want a creamy sauce, add the cream and let boil 1 additional minute.
  • Add pasta, some of the reserved liquid, smoked salmon, toasted pine nuts, and remaining zest to the sauce. Season with freshly ground pepper to taste.
