Ingredients
8oz.pasta
kosher salt
1/4cuppine nuts
2tbsp. olive oil
1/3cupchopped shallots
2cloves garlic, minced
1/3 cupdry white wine
1/4cup cream (optional)
1tbsp. lemon juice
2tbsp.lemon zest, divided into in half
2tbsp. fresh dill, chopped
4oz.smoked salmon, cut into bite-sized pieces
Instructions
Boil pasta according to package instructions. Reserve 1 cup of water before draining pasta.
Toast pine nuts in a single layer in a skillet on medium heat until lightly browned.
While pasta is cooking, prepare the sauce. In a large skillet heat olive oil on medium heat. Add the shallots and garlic. Cook for 2 minutes, then add white wine, lemon juice, and 1 tbsp. zest. Increase heat and let reduce by half. If you want a creamy sauce, add the cream and let boil 1 additional minute.
Add pasta, some of the reserved liquid, smoked salmon, toasted pine nuts, and remaining zest to the sauce. Season with freshly ground pepper to taste.
