No-Bake Peanut Butter Oat Cups
This healthy-ish treat is inspired by peanut butter cups.
- 2 1/4 cups old fashioned oats
- 1/2 cup honey
- 1/3 cup creamy peanut butter
- 1 tsp vanilla
- 3/4 cup dark chocolate chips
- 2 tsp coconut oil
- sea salt
Spray a muffin tray with cooking spray to prevent sticking.
Combine the oats, honey, peanut butter, and vanilla in a large bowl.
Distribute the mixture evenly between the muffin tray. Press down the mixture to pack lightly.
Combine the chocolate chips and coconut oil in a small bowl. Microwave for 30 seconds at a time until melted. Mix well to combine then spoon over the oat mixture.
Sprinkle with sea salt while the chocolate is still melted.
Place in freezer for one hour until firm.
