No-Bake Peanut Butter Oat Cups

This healthy-ish treat is inspired by peanut butter cups.

Ingredients

  • 2 1/4 cups old fashioned oats
  • 1/2 cup honey
  • 1/3 cup creamy peanut butter
  • 1 tsp vanilla
  • 3/4 cup dark chocolate chips
  • 2 tsp coconut oil
  • sea salt

Instructions

  • Spray a muffin tray with cooking spray to prevent sticking.
  • Combine the oats, honey, peanut butter, and vanilla in a large bowl.
  • Distribute the mixture evenly between the muffin tray. Press down the mixture to pack lightly.
  • Combine the chocolate chips and coconut oil in a small bowl. Microwave for 30 seconds at a time until melted. Mix well to combine then spoon over the oat mixture.
  • Sprinkle with sea salt while the chocolate is still melted.
  • Place in freezer for one hour until firm.
