Fig Tart

Ingredients

  • 24 small figs
  • 1/2 sugar
  • 4 tbsp salted butter, diced
  • 1/4 cup apricot preserves, heated and strained

Instructions

  • Lightly spray a pie dish with cooking spray. Place the pie crust in the dish. Remove the stem of each fig and cut into quarters. Arrange the cut figs on the crust in circles. Sprinkle with sugar and dot with butter.
  • Bake for 50 minutes, until crust is golden brown and fruit begins to turn brown. If the crust puffs up, cut a little slit to let the air out.
  • When the tart is done, place on a piece of parchment paper.
  • While it's still warm, heat apricot preserves with 2 tablespoons water in a small saucepan. Strain the preserves. Brush the mixture over the entire tart. Serve warm or at room temperature.
