Egg Roll in a Bowl

Ingredients

  • 1 lb. ground pork
  • 16 oz. bag coleslaw mix (shredded carrots & cabbage)
  • 5 tsp. garlic, minced
  • 1 tsp. fresh ginger, minced
  • 1/3 cup soy sauce
  • 2 tbsp. sesame oil
  • 6 green onions, whites and green tips separated & chopped

Instructions

  • Combine garlic, ginger, soy sauce, and sesame oil in a small bowl.
  • Brown pork in a large skillet over medium high heat.
  • Add slaw mixture and whites from onions, stir to combine.
  • Add sauce mixture to the meat mixture. Stir and cook for about 3-5 minutes, until the cabbage has just begun to wilt.
  • Serve over rice, quinoa, or eat alone. Garnish with green onions.
