Cottage and Vine Chicken Salad

This chicken salad is a family favorite. We love it on croissants or on a bed of mixed greens.

Ingredients

  • 2 cups diced chicken Rotisserie chicken saves time!
  • 2/3 cup salsa or to taste
  • 2 Tbs mayo We use Duke's.
  • 1/4 cup fat-free Greek yogurt Fage is the best.
  • 2 cups celery sliced thin
  • 2 cups red seedless grapes halved
  • 1/4 cup nuts almonds, pecans, or walnuts sliced or chopped
  • 1/3 cup scallions chopped
  • salt & pepper to taste

Instructions

  • Mix all of the chopped ingredients together in a large bowl.
  • In another bowl, whisk together the yogurt, mayo, and salsa. Pour the mixture over the chopped ingredients.
  • Serve immediately or refrigerate for at least an hour to serve chilled.
