Cottage and Vine Chicken Salad
This chicken salad is a family favorite. We love it on croissants or on a bed of mixed greens.
- 2 cups diced chicken Rotisserie chicken saves time!
- 2/3 cup salsa or to taste
- 2 Tbs mayo We use Duke's.
- 1/4 cup fat-free Greek yogurt Fage is the best.
- 2 cups celery sliced thin
- 2 cups red seedless grapes halved
- 1/4 cup nuts almonds, pecans, or walnuts sliced or chopped
- 1/3 cup scallions chopped
- salt & pepper to taste
Mix all of the chopped ingredients together in a large bowl.
In another bowl, whisk together the yogurt, mayo, and salsa. Pour the mixture over the chopped ingredients.
Serve immediately or refrigerate for at least an hour to serve chilled.
