I’ve been making it for my family for years, and let me tell you, it’s a guaranteed hit! To save time, I use a ready-made roasted chicken that you can buy at the store. It usually gives around 2 cups of chicken, unless you get it from Costco where everything is bigger. This recipe requires nuts, but it isn’t mandatory, ha! I use whatever nuts I have available. For this particular recipe, I used sliced almonds and walnuts. If you prefer spicier food, you can use hot salsa, or if you like less spice, you can go with mild or medium salsa. This recipe can be easily personalized to suit your preferences.
Cottage and Vine Chicken Salad
Ingredients
- 2 cups diced chicken Rotisserie chicken saves time!
- 2/3 cup salsa or to taste
- 2 Tbs mayo We use Duke's.
- 1/4 cup fat-free Greek yogurt Fage is the best.
- 2 cups celery sliced thin
- 2 cups red seedless grapes halved
- 1/4 cup nuts almonds, pecans, or walnuts sliced or chopped
- 1/3 cup scallions chopped
- salt & pepper to taste
Instructions
- Mix all of the chopped ingredients together in a large bowl.
- In another bowl, whisk together the yogurt, mayo, and salsa. Pour the mixture over the chopped ingredients.
- Serve immediately or refrigerate for at least an hour to serve chilled.
