Last week, our son shared figs from his fig tree and I could not wait to make something with them. He gave us an entire gallon ziploc bag so I knew that I needed to make something that required lots of figs. I decided to splurge and make a dessert to share when we visited my parents for dinner. To save time, I used a store-bought pie crust, but you could make your own if that’s your preference. The other ingredients were really simple – figs, sugar, butter, apricot preserves, and a little water. We served the tart with a dollop of vanilla ice cream, but freshly whipped cream would also be good. Of course, the tart would have been good all by itself. If I’m being honest, I think it would be perfect for breakfast alongside a latte.
Figs are one of the most beautiful fruits, I think. These are quartered and arranged in a circle-ish. Next, I sprinkled the figs with sugar and dotted with diced pieces of butter and baked. Finally, I brushed the entire tart with a mixture of apricot preserves mixed with a bit of water. So good, I tell you! See the recipe below.
Fig Tart
Ingredients
- 24 small figs
- 1/2 sugar
- 4 tbsp salted butter, diced
- 1/4 cup apricot preserves, heated and strained
Instructions
- Lightly spray a pie dish with cooking spray. Place the pie crust in the dish. Remove the stem of each fig and cut into quarters. Arrange the cut figs on the crust in circles. Sprinkle with sugar and dot with butter.
- Bake for 50 minutes, until crust is golden brown and fruit begins to turn brown. If the crust puffs up, cut a little slit to let the air out.
- When the tart is done, place on a piece of parchment paper.
- While it's still warm, heat apricot preserves with 2 tablespoons water in a small saucepan. Strain the preserves. Brush the mixture over the entire tart. Serve warm or at room temperature.
