I love a dish that’s quick, easy, & healthy! This recipe checks all the boxes. All you need is a few simple ingredients and dinner can be ready in a snap. The main ingredients are a bag of slaw with carrots & purple cabbage, lean ground pork (substitute with ground turkey or chicken if desired), ginger, and green onions. You can serve it over quinoa or rice to stretch it out a bit, but I eat it all by itself with a generous drizzle of sriracha sauce or Chinese mustard. It makes 4-6 servings depending on appetites.
Leftovers are great the next day with an egg over medium cooked in olive oil. Enjoy!
Egg Roll in a Bowl
Ingredients
- 1 lb. ground pork
- 16 oz. bag coleslaw mix (shredded carrots & cabbage)
- 5 tsp. garlic, minced
- 1 tsp. fresh ginger, minced
- 1/3 cup soy sauce
- 2 tbsp. sesame oil
- 6 green onions, whites and green tips separated & chopped
Instructions
- Combine garlic, ginger, soy sauce, and sesame oil in a small bowl.
- Brown pork in a large skillet over medium high heat.
- Add slaw mixture and whites from onions, stir to combine.
- Add sauce mixture to the meat mixture. Stir and cook for about 3-5 minutes, until the cabbage has just begun to wilt.
- Serve over rice, quinoa, or eat alone. Garnish with green onions.
