Blueberry streusel tea bread is one of my family’s favorite treats that I make around the holidays. In the past, I’ve made it into mini loaves to share with neighbors. Sometimes, I make it ahead of time and freeze it. I pull it out of the freezer on Christmas Eve so that it can thaw in time for Christmas morning. It’s nice to have something already prepared!
I always use fresh blueberries, but you can also use frozen. I also cut the sugar back to 1 cup, but the original recipe calls for 1 1/4 cups sugar. The bread is topped with a yummy butter-brown sugar-pecan mixture that turns crunchy after it’s baked. I love how the soft bread and the crunchy topping pair well together. This is the perfect bread to have coffee. If you try it, I’d love to hear what you think.
Blueberry Streusel Tea Bread
Ingredients
- 2 1/2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 stick butter, softened
- 1 1/4 cups sugar
- 1 tsp vanilla extract
- 2 large eggs
- 8 oz sour cream
- 1 1/2 cup fresh or frozen blueberries
Streusel
- 1/4 cup all purpose flour
- 1/4 cup packed light brown sugar
- 2 tbsp chopped pecans
- 1/8 tsp ground cinnamon
- 2 tbsp butter, softened
Instructions
- Preheat oven to 350° F. Grease and flour 9 x 5" metal loaf pan.
- Stir flour, baking powder, baking soda, and salt together in a medium bowl.
- Mix butter on a low speed until smooth. Add sugar and beat until creamy at medium-high speed. Beat in vanilla.
- Reduce speed to low and add eggs, one at a time, beating after each addition until well blended. Scrape bowl occasionally as needed. Add flour mixture alternately with sour cream, beginning and ending with flour mixture. Fold in blueberries.
To Make Streusel
- Mix ingredients with fingers until well blended. Spoon batter into prepared loaf pan. Sprinkle streusel over batter. Bake 1 hour and 15 minutes or until toothpick inserted comes out clean.
- Yields 1 loaf or 4 mini loaves. For mini loaves, bake about 40 minutes or until bread tests done with toothpick.

I made this yesterday and it was delicious. I used the giant fresh blueberries, and plan on making another loaf to serve with coffee and tea along with a breakfast casserole for Christmas morning when we have family visiting. Thanks for sharing Renee.
