My name is René and I have a confession. I cannot stop eating these yummy little protein balls. It doesn’t help that they taste like Reese’s cups. My only saving grace is that they are packed with nutritious ingredients. Other than the mini chocolate chips, but a girl has to have a little fun. There are hundreds of recipes for these, but I’ve come up with my own and since they are disappearing like they are, they must be pretty good! You can find some of the ingredients right here.
Protein Balls
If you like Reese's, but want a healthier option, this little snack is for you.
Ingredients
- 2 cups organic old fashioned oats finely ground in the blender
- 1 cup organic sugar-free peanut butter
- 1/3 cup organic honey
- 1 cup mini chocolate chips
- 2 scoops collagen peptide protein powder
- 1/8 cup hemp hearts
- 1/8 cup chia seeds
- 2 tsp vanilla extract
- dash salt
Instructions
- Combine all dry ingredients together in a kitchen-aid mixing bowl. Mix well with the paddle attachment. Add wet ingredients and mix until you can form a ball with your hands. Scoop into 2-inch balls and place them on a cookie sheet. Refrigerate for one hour. Store in an airtight container in the refrigerator up to a week, if they last that long ;).
