This strawberry and feta recipe is perfect for summer when strawberries are in season. We like to have this salad with grilled chicken or fish and a crisp Sauvignon Blanc for a light summer supper. It only takes a few minutes to put together and it is yummy! Enjoy!

Strawberry and Feta Salad
Make this salad when strawberries are in season for the best flavor. We love how the strawberries complement the briny feta.
Servings 4
Ingredients
- 1 tsp Dijon mustard
- 2 tbsp balsamic vinegar
- 1 clove garlic, minced
- 1/4 cup extra-virgin olive oil
- 1/2 tsp sea salt
- 1/8 tsp ground black pepper
- 5 oz spring mix salad greens
- 1 pint ripe strawberries, hulled and quartered
- 1/2 cup crumbled feta cheese
Instructions
- To make the dressing, add the Dijon, vinegar, garlic, oil, salt, and pepper to a shaker or cruet. Shake to mix.
- In a large bowl, combine the salad greens and dressing. Toss to mix. Transfer to a serving platter and top with the strawberries and feta.
- Drizzle any remaining dressing over the salad and serve.
