A few weeks ago, our youngest son made this delicious dinner for us. It was so good you would’ve thought he had spent hours on it! Turns out, he only used three ingredients – sausage, risotto, and goat cheese. I immediately took a page from his playbook and tried it myself. Scroll down to learn more.
- Trader Joe’s frozen risotto, mushroom or asparagus
- Italian sausage
- 5 oz. goat cheese
To make this dish: You can either remove the casing and crumble and cook the sausage or slice it with the casing on before cooking. I prefer crumbled, but it makes no difference. Prepare the risotto according to the package directions. Once the sausage and risotto are ready, add the goat cheese and toss to combine. I threw in a handful of baby spinach for some extra veggies and topped it with lots of cracked black pepper. Viola!
It’s the easiest dinner to make, and it’s perfect for these cold winter nights when you want a bowl of comfort food. I started thinking about all the different ways this risotto could be used, and I’m planning to try a different combination next time. I’ve listed some ideas below. Let me know if you try it!
