I’ve shared this recipe before, but it’s worth a repeat! Especially now that all of the fresh veggies are in season. Yesterday, I went with a friend to Rudd Farm to stock up on fresh tomatoes, corn, and cucumbers. So, naturally, we had this for dinner last night.
To make corn, tomato, & cucumber salad:
- assortment of cherry/grape tomatoes
- cucumbers, peeled & chopped (also good with the skin left on)
- raw corn cut off the cob
- a slice or two sweet onion, chopped
- Italian dressing
I’ll be honest, I don’t measure any of the ingredients. I just start chopping, adding, & mixing. You really cannot mess this up! I use this Italian dressing mixed in this cruet most of the time, but this one is made with a dressing I bought Saturday at the Farmer’s Market on the corner of Elam & Walker. It’s delish! This dish is great for any cookout. We love it with burgers, grilled chicken, or fish. It’s always a family favorite!
Here’s a trick I use for our cookouts. I line these baking sheets with parchment paper. I like these that come pre-cut in sheets depending on the size of your baking sheet. And these are fun for something more festive. They come in several sizes. My baking sheets are 10″. They are easy to clean and you really can’t break them, lol!
I just stack ’em all up like this & everybody can grab & go. Easy!
