As soon as the weather warms up one of my favorite dishes is grilled pineapple. It just says summer to me! We usually serve it with grilled pork tenderloin. It’s such a yummy pairing! R marinates the pork all day in a combination of teriyaki, soy sauce, freshly grated ginger, and minced garlic. The pineapple needs no marinade because it is sweet and delicious as is and grilling it only brings out more sweetness.
This time I served it with cauliflower rice sautéed in olive oil with a sprinkling of kosher salt & topped with freshly grated parmesan. I love that you can buy cauliflower rice in most grocery stores now! I also served a tossed salad with arugula, cucumbers, grape toms, orange bell pepper, roasted asparagus, green onions, green olives, feta, and Italian dressing.
This meal is light and satisfying and full of flavor!
