This recipe and just about everything we’ve been cooking lately came from The Dude Diet. My family is a huge fan, so much so that our oldest son requested his very own copy to cook for the guys in the house at college. The caption on the cover of the book says it best, “clean-ish food for people who like to eat dirty”. It may not be totally clean, but everything we’ve made is delicious. Many of the recipes serve two which is perfect for us.
Quinoa Crunch Granola
This recipe is adapted from the Dude Diet cookbook.
Ingredients
- 2 1/2 cups old fashioned rolled oats
- 3/4 cup chopped pecans
- 3/4 cup sliced almonds
- 1/3 cup uncooked quinoa, rinsed and drained I have substituted with chia before.
- 2 tsp ground cinnamon
- 1/4 tsp fine grain sea salt
- 1/3 cup liquid extra virgin coconut oil I used avocado oil.
- 1/2 cup pure maple syrup
Instructions
- Preheat oven to 300 degrees. Line large baking sheet with parchment paper. In a medium bowl, combine the oats, nuts, quinoa, cinnamon, and salt.
- In a separate bowl, whisk together the coconut oil and maple syrup. Pour the wet ingredients over the dry ingredients and stir until well combined.
- Spread the oat mixture on the prepared baking sheet in an even layer. Use the bottom of a glass to gently press the mixture to pack it down.
- Bake for 40-45 minutes. Cool for 30 minutes before breaking into pieces. Store in an airtight container for up to 2 weeks.
- Serve with plain Greek yogurt or milk if desired.

I love homemade granola. I have one I take on all of our group camping trips and it's always a hit. Similar to this recipe but I've never added quinoa. I will have to try it!
