Truth be told I could eat Mexican food just about any day of the week. So it’s no surprise that I jump at the chance to celebrate Cinco De Mayo with a few favorite Mexican dishes. I’ve mentioned my favorite fajitas here, super easy & delicious, by the way. I don’t think I’ve ever had a bad fish taco either and the shrimp tacos below are perfect – that crema! My husband and I try to make our drinks on the lighter side so the margarita recipe is spot on for us. We have been making something similar using vodka as our signature drink. It’s low cal and all the ingredients are natural. I’m always looking for ways to add healthy veggies to our meals. So the chopped salad is spot on and it serves a crowd.
