One of my personal goals for the new year is to eat more raw foods. I’ve enjoyed trying new salad recipes and have found that as long as I have ingredients on hand it really doesn’t take any more time to make something healthy and delicious and it is totally worth the effort. The first recipe I tried was so good and I had leftovers for lunch a couple of times sprinkled with a tiny bit of feta.
I recently bought this peeler and it is a game changer I tell you! In minutes I can turn vegetables into what looks like pasta and make amazing dishes all from fresh food. With growing season quickly approaching, I wanted to be sure to have this thing up and running in time for my summer garden.
It comes with three blades so I have different size options and I’m looking forward to experimenting further with it. I’m curious about oven fries with sweet potatoes. Have you tried it? I cannot wait to try more recipes, and would love to hear from you if you have a recipe to recommend.

I love making & eating zoodles (zucchini-noodles)!!! It's a healthy meal and especially easy to whip dinner up when time is limited. Even great in the hot summer months eating them cold with veggies and pesto. Oh goodness, now I think I might have to make this for dinner after we get home from my boys' baseball games 🙂

I was watching a cooking show recently and they were making dishes with veggie noodles instead of pasta. It looked delicious! I would love to get this veggie peeler. Isn't it wonderful having fresh veggies from your own garden!
